Turkey Pasta Stuff
Ingredients:
1lb. ground turkey
1 yellow onion, diced
2 carrots, peeled and roughly chopped
3-4 ribs celery, washed, and roughly chopped
minced garlic - measure with your heart
1-2 bell peppers, diced
2 poblano peppers, diced
2 jalapeños, diced (if you don’t like spice, don’t add jalapeños. If you do like spice add more.)
1 zucchini, diced
1-28oz. can of diced tomatoes
1 bunch cilantro, chopped
1 box rotini (or another pasta shape…it’s your meal, choose the fucking pasta that you want)
chili powder
cumin
coriander
salt & pepper
Directions:
Get a pot of water on a burner at med-low heat. Salt the hell out of it. You’re going to cook your pasta in it but you don’t need it to start boiling right away.
In a large, heavy bottomed pot, drizzle olive oil over med-high heat and brown the turkey, seasoning with salt and pepper. Once turkey is almost completely cooked through, add the carrots, onions, and celery. Season with chili powder, cumin, coriander, and salt & pepper. Cook until vegetables have softened.
Turn up the heat on your pasta water and add the pasta once it starts boiling - cook to package directions.
Add garlic to your turkey mixture and cook another 30-60 seconds. Add all the peppers and cook another 3-4 minutes until they begin to soften. Add tomatoes and zucchini and give the whole thing another round of seasoning, tasting as you go.
Once your pasta is done, reserve about 2 Cups of the pasta water and drain the rest. Add the pasta to the turkey mixture. If it needs more water, use the pasta water until it gets to your desired consistency.
Turn the heat off, stir in the cilantro and serve that shit.
