Asian-Style Dumpling Soup

1/2 yellow onion, finely diced

1 1/2” ginger, peeled & grated

4 garlic cloves, minced

2 stalks lemongrass, finely sliced

10-12 Cups chicken stock

5-6 basil leaves, chopped

1 bunch cilantro, chopped

1 Tbsp soy sauce

1 tsp fish sauce

1 tsp rice vinegar

2 tsp honey

1 pack Asian-style dumplings

sesame seeds

red pepper flakes

turmeric

  1. Drizzle some olive oil in a cast iron pot over med-high heat. Add onion, ginger, garlic, lemongrass, basil and cilantro. Season with turmeric, red pepper flakes, and sesame seeds.

  2. Cook, stirring frequently, until fond forms. Add about one cup of stock and scope up the fond. Add remaining stock, soy sauce, fish sauce, vinegar, and honey.

  3. Bring to a boil, add dumplings. Boil about 8 minutes.
